Aguacates rellenos

Ingredientes

  • 2 Aguacates
  • 1 Libra de filete de pescado (pez León o Merluza)
  • 4 Palitos de surimi picados en tiritas
  • ½ Libra de mejillones cocidos
  • ½ Libra de camarones pelados crudos
  • 2 Limones (el zumo) o al gusto
  • Sal y pimienta al gusto
  • Salsa de cóctel rosada al gusto

Preparación

  1. En una sartén, calentar un poco de aceite de oliva y adicionar el pescado cortado en porciones pequeñas.
  2. Cuando casi esté cocido, adicionar los camarones, mover bien y agregar los mejillones.
  3. Salpimentar y dejar cocinar.
  4. Luego, abrir los aguacates a lo largo por la mitad, retirar las semillas y quitar un poquito de la masa con una cucharita para que el hueco esté un poco más grande.
  5. Esparcir jugo de limón por encima de la pulpa de las mitades de aguacate y salpimentar.
  6. Cortar los palitos de surimi en tiritas pequeñas, agregar a la sartén, mover y terminar de cocinar.
  7. Dejar refrescar un poco, agregar la salsa rosada (reservar un poco), mezclar bien, rectificar sabores y rellenar los aguacates.
  8. Adornar con 2 mejillones, 2 camarones, un poco de salsa rosada por encima.
  9. Llevar a la nevera para refrescar antes de servir.
