Albóndigas de plátano maduro rellenas de bacalao

Ingredientes

  • 5 Plátanos maduros
  • 3 Cdas. de mantequilla
  • 1 ¼ Tazas de queso cheddar rallado
  • 2 Cdas. de azúcar parda
  • 2 Cdas. de aceite
  • 1/4 Taza de pasta de tomate
  • 1/4 Taza de cebolla picadita
  • 3 Dientes de ajo majados
  • 1 Ají cubanela picadito
  • 1 Cda. de cilantro picadito
  • 1 Libra de bacalao, desalado
  • 1 Cda. de fécula de maíz disuelta en una cucharada de agua
  • Harina
  • Pasas
  • Aceite para freír las albóndigas

Preparación

  1. En una sartén verter el aceite y sofreír la cebolla, el ajo, la pasta de tomates y el cilantro, cocinar a fuego medio por 2 minutos.
  2. Incorporar una taza del caldo donde cocinaste el bacalao, dejar que tome consistencia y reservar la mitad de la salsa en una sartén aparte.
  3. Agregar el bacalao, verter la fécula de maíz y cocinar hasta que se espese.
  4. Retirar del fuego y deja enfriar.
  5. Hervir los plátanos con el azúcar y preparar un puré con la mantequilla y el queso rallado.
  6. Para realizar las albóndigas tomar un poco de puré, abrir un hueco en el centro y rellenar con la mezcla del bacalao y una pasa.
  7. Pasar las albóndigas por harina y freírlas en abundante aceite caliente.
  8. Servir con el resto de la salsa reservada.
