Eliminar la parte superior de las berenjenas, vaciarles la masa, evitando romperlas.
En el aceite caliente sofreír el ajo, la cebolla, la pasta de tomate, la carne molida y la pulpa de las berenjenas.
Cuando todo esté bien cocido, retirar la carne del fuego y mezclarla con el arroz y el perejil. Luego salpimentar.

Retirar del fuego y dejar reposar para servir.
También puede cocinar en el horno a 350 °F por 45 minutos, bien tapadas.
