Ingredientes

  • 1¼ tazas de harina de batata
  • 1½ cucharaditas de polvo de hornear
  • ¼ cucharadita de sal
  • 5 huevos (separadas yemas y claras)
  • ¼ taza de miel de abejas
  • ¼ taza de aceite de coco
  • 1 cucharada de extracto de vainilla
  • ¼ taza de coco rallado
  • ½ taza de leche de almendra

Preparación

  1. Precalentar el horno a 350ºF.
  2. Mezclar en un envase la harina de batata, el polvo de hornear y la sal. Reservar.
  3. Romper bien las yemas con un tenedor, adicionar la miel, el aceite de coco y el extracto de vainilla, y mezclar.
  4. Adicionar el coco rallado y la leche, y mezclar bien.
  5. Luego, unir ambas mezclas, incorporar poco a poco la harina reservada y unificar.
  6. Con la batidora de mano o eléctrica, batir las claras a punto de nieve, hasta que formen picos duros. Incorporar las claras al resto de la mezcla, unir todo de forma envolvente y verter en un molde de bizcocho o en moldecitos para muffins.
  7. Hornear durante 25 minutos, o hasta que la parte superior se haya dorado y que al insertar un palillo en el centro salga limpio.
