Ingredientes

  • 2 calamares grandes limpios
  • 1 cebolla cortada en cubitos
  • 4 dientes de ajo triturados
  • 1 pimiento rojo y 1 amarillo cortados en cubos
  • 1 zanahoria cortada en cubos
  • 1 zucchini cortado en cubos
  • 15 camarones limpios
  • 1 cucharada de eneldo
  • 1 cucharadita de pimentón
  • 1/2 cucharada de comino
  • 4 tomates triturados
  • 1 taza de vino blanco
  • 1 taza de caldo de pescado
  • Sal y pimienta
  • Aceite vegetal para freír
  • 1 cucharadita de fécula de maíz (opcional)

Preparación

  1. En una sartén con un chorrito de aceite sofreímos la cebolla y los ajos.
  2. Cuando estén ponchados agregamos los pimientos y la zanahoria.
  3. Cuando la zanahoria esté casi blanda agregamos los zucchini y los camarones.
  4. Luego añadimos el pimentón, el comino y el eneldo, y dejamos cocer hasta que los vegetales estén al dente.
  5. Salpimentamos y dejamos refrescar.
  6. Rellenamos los calamares con esta mezcla y llevamos a freír en una sartén con aceite vegetal, girándolos por todos lados para que no se quemen.
  7. Aparte, preparamos una salsa con los tomates, vino blanco, caldo de pescado, sal y pimienta.
  8. Si queremos una salsa un poco más espesa, agregamos un poco de fécula de maíz disuelta en un poquito de agua.
  9. Cuando los calamares estén cocidos, los bañamos con esta salsa y servimos.
