Canelones rellenos de bacalao

Ingredientes

  • 1 paquete de canelones
  • 1 1/2 libras de bacalao desalado y desmenuzado
  • 1 lata de sopa de queso
  • 2 dientes de ajo picaditos
  • 2 pimientos picaditos (rojo y verde)
  • 3 zanahorias ralladas
  • Queso parmesano rallado
  • 20 tomates barceló cortados en cubos
  • 1 cebolla picadita finamente
  • 1 atado de albahaca picadita
  • Alcaparritas
  • Sal y pimienta al gusto

Preparación

  1. Cocinamos los canelones de acuerdo a las indicaciones del empaque.
  2. Aparte, sofreímos el ajo y luego añadimos los pimientos.
  3. Agregamos el bacalao y después las zanahorias.
  4. Cocinamos por unos minutos, agregamos la sopa de queso y salpimentamos; reservamos.
  5. Para la salsa, en una olla sofreímos la cebolla picadita en el aceite de oliva.
  6. Luego agregamos los tomates picaditos, dejamos que se ablanden y, de ser necesario, añadimos un poco de agua.
  7. Para terminar la salsa, agregamos la albahaca, las alcaparritas y salpimentamos.
  8. Rellenamos los canelones con la mezcla del bacalao.
  9. En un pyrex colocamos parte de la salsa, luego vamos colocando los canelones ya rellenos, los bañamos con la salsa restante y le espolvoreamos el queso rallado.
  10. Llevamos al horno a una temperatura de 350ºF por unos 25 minutos.
