Ingredientes

  • 12 Hojas de arroz
  • ¼ Taza de vinagre de arroz (2 cucharadas adicionales)
  • 1 Cucharada de azúcar
  • 1 Zanahoria grande rallada (mas o menos una taza)
  • 1 Pepino grande (pelado, sin semillas y cortado a la Juliana)
  • 1 Ramo de puerro
  • ½ Taza de hojas de cilantro, menta o albahaca
  • 12 Hojas de lechuga (tipo boston o dulce)
  • 2 Cucharadas de salsa de soya
  • 2 Cucharadas de Ponzu
  • 1 Cucharada de zumo de limón
  • 1 Diente de ajo laminado
  • 1-2 Cucharadas de agua

Preparación

  1. Mezcle ¼ de taza de vinagre de arroz con 2 cucharaditas, hasta que el azucar se disuelva.
  2. A este aderezo agregue la zanahoria y sazone con sal al gusto y deje reposar.
  3. Prepare las hojas de arroz, sumergiendolas en agua tibia dejando que se hidraten por unos 15 segundos mas o menos y secando el resto del agua con papel toalla.
  4. Coloque una hoja de arroz sobre ella una hoja de lechuga y agregue un poco zanahoria cubra con tiras de pepino y puerro, mas las hojas ( enteras o picaditas de cilantro, albahaca o menta ) y enrolle.
  5. Coloque el rollo en una bandeja y repita el proceso. Al final cubra los rollitos con una papel toalla humedo. Asi permaneceran fresco y no se secaran.
  6. Al momento de servir corte por mitad de forma diagonal y sirva acompañelo con alguna salsa.
  7.  SALSA DE MANI: En un recipiente mezcle la soya, ponzu y limon. Lamine el ajo e incorpore a la salsa, deje reposar por unos minutos. Luego retire los ajos, agregue agua para suavizar y sirva con hojitas de cilantro por arriba.
  8. Servir en un bowl y acompañar con los rollos
