Ingredientes

  • 1/2 Taza de margarina
  • 1 Huevo
  • 1 Taza de azúcar parda
  • 1 Cucharadita de extracto de vainilla
  • ½ Taza de melao
  • 1 Cucharadita de jengibre rallado
  • 2 Tazas de harina
  • 1 ½ Cucharaditas de bicarbonato de sodio
  • 1 Cucharadita de canela en polvo
  • 1 Cucharada de nuez moscada
  • ¼ De cucharadita de sal
  • 2 1/2 Tazas de coco rallado

Preparación

  1. Cremar la margarina.
  2. Agregar el huevo, el azúcar, la vainilla y batir por 3 minutos.
  3. Verter el  melao, el jengibre y batir 1 minuto más.
  4. Cernir el harina junto con la sal, el bicarbonato, la canela, y verter a la mezcla de margarina.
  5. Mezclar bien, añadir el coco, tomar porciones de una cucharada, formar una bola y aplastar suavemente hasta que quede de ½ pulgada de grosor.
  6. Poner en una bandeja y hornear a 300 grados por 25 minutos.
