Croquetas de salami con agridulce de kétchup picante

Ingredientes

  • 4 Cucharaditas de mantequilla
  • 1 Cebolla picada
  • 1 Taza de leche
  • ¾ Taza de harina
  • ½ Cucharadita de sal
  • 1 Cucharadita de pimienta
  • 1 Cucharadita de vino seco
  • 2 Tazas de salami molido
  • 2 Huevos
  • 2 Tazas de galleta molida
  • 2 Tazas de aceite vegetal
  • 600 Mililitros de kétchup
  • 100 Gramos de azúcar
  • 1 Cebolla mediana
  • ½ taza de zumo de limón
  • 1 taza de miel
  • 1 Cucharadita de pimentón dulce
  • 2 Cucharaditas de orégano
  • 2 Cucharaditas de sal
  • 2 Cucharadas de Sriracha (o al gusto)
  • 1 Cucharadita de ajo en polvo

Preparación

  1. Para las croquetas: En un sartén calentar la mantequilla, agregar la cebolla picada y dejar sofreír.
  2. Aparte, unir en un bowl la harina con la leche.
  3. Sazonar con sal y pimienta y mezclar un poco.
  4. Agregar esta mezcla al sartén donde se está sofriendo la cebolla, y cocinar por 10 minutos revolviendo constantemente para evitar que se pegue.
  5. Cuando esté bastante espesa, retirar del fuego y agregar el vino y el salami y mezclar hasta que quede todo bien unido.
  6. Poner la masa a reposar en un recipiente y luego ponerla en la nevera.
  7. Cuando esté fría, se forman las croquetas pasadas por huevo y galletas molidas.
  8. Freír y cuando estén doradas, retirar del fuego y servir.
  9. Para el kétchup picante: Triturar la cebolla en una picadora, añadir el kétchup, el zumo de limón y el azúcar.
  10. Mezclar.
  11. Añadir la miel y remover.
  12. En un bowl aparte mezclar los ingredientes restantes y añadir a la mezcla que se tenía aparte.
  13. Remover bien y poner a calentar a fuego medio, unos 10 minutos, para que se unan todos los sabores.
