Ingredientes

  • 1 Filete de dorado FROZEN FRESH
  • 3 Dientes de ajo
  • ½ Cebolla roja picada en juliana
  • 4 Aceitunas negras
  • ½ Cucharada de alcaparras
  • 2 Cucharadas de aceite de oliva
  • 1 Cucharada de vino blanco
  • ½ Pimiento morrón o de piquillo, asado (cortado en tiras)
  • Hojuelas de pimienta de cayena
  • Pizca de mezcla de hierbas italianas
  • Sal y pimienta al gusto
  • Papel de aluminio

Preparación

  1. Colocamos una lámina de papel de aluminio que cubra el filete de pescado y colocamos sobre ésta el filete de dorado. Reservamos.
  2. En una sartén, agregamos 1 ½ cucharada de aceite de oliva, los ajos y la cebolla roja.
  3. Salteamos por unos segundos, luego damos toque de sal y pimienta.
  4. Incorporamos las aceitunas negras picadas y las alcaparras. Incorporamos el vino y dejamos evaporar por unos segundos.
  5. Retiramos del fuego y agregamos el toque de las hierbas italianas, las hojuelas de pimienta de cayena y los pimientos de piquillo. Mezclamos bien.
  6. Al filete de pescado, le agregamos un toque de sal y pimienta y por arriba colocamos la mezcla de cebolla y aceitunas.
  7. Finalizamos rociando el resto del aceite de oliva y colocando un diente de ajo aplastado por arriba.
  8. Cerramos el pescado, logrando formar un sobre pero con los extremos semi abiertos y llevamos al grill a cocinar por unos 7 minutos (dependerá del grosor del pescado).
  9. Retiramos, abrimos el papel y servimos directo.
