Ingredientes

  • 3 dorados limpios y sin escamas
  • 2 limones
  • 2 naranjas
  • 1 taza de vino blanco
  • 20 tomates cherries
  • 20 aceitunas negras
  • 1 atado de perejil fresco picadito
  • 1 ramita de albahaca fresca picadita
  • 1 cucharadita de laurel molido
  • 1 cucharadita de orégano
  • 3 cucharadas de aceite de oliva
  • Sal y pimienta al gusto

Preparación

  1. Sazonamos los pescados con sal y pimienta, y reservamos.
  2. Aparte, rallamos la piel de 1 limón y de 1 naranja, y extraemos el zumo. Reservamos.
  3. Ponemos el pescado sobre una bandeja para horno cubierta con papel de aluminio.
  4. Colocamos junto con el pescado los tomates, la naranja y el limón restantes cortados en rodajas, y las aceitunas.
  5. Espolvoreamos los pescados con perejil, albahaca, orégano y laurel, y los bañamos con un chorro de aceite de oliva.
  6. Mezclamos el vino, las ralladuras y los zumos, y bañamos el pescado con esta mezcla.
  7. Llevamos al horno a una temperatura de 180ºC por unos 35 minutos.
