Ingredientes

  • 1 Lechuga romana
  • 2 Tazas de hojas de rúcula
  • ½ Taza de queso manchego o de cabra, rallado
  • ½ Taza de salami genoa picadito o tocineta tostada
  • ¼ De taza de nueces caramelizadas o tostadas
  • 2 Tazas de jugo de naranja
  • ¼ De cucharadita de hojuelas de pimienta de cayena
  • 1 Cucharadita de vinagre de arroz
  • 1 Cucharadita de miel
  • 1 ¼ De cucharadita de aceite de sésamo (se puede sustituir por 1 cucharadita de aceite regular)
  • ½ Cucharadita de jengibre rallado
  • Puerro picadito

Preparación

  1. Para el aderezo, en una sartén de fondo hondo y a fuego medio, poner a reducir el jugo de naranja hasta que espese (más o menos 10- 15 minutos). Luego apagar el fuego, agregar las hojuelas de cayena y dejar reposar por unos minutos.
  2. Llevar la reducción de naranja a un recipiente y agregar el jengibre rallado, mezclar bien y luego incorporar el vinagre de arroz, la miel y el aceite de sésamo.
  3. Mezclar bien y reservar. Cuando el aderezo esté frío agregar el puerro picadito.
  4. Mezclar la lechuga con la rúcula y aderezar con un poco de la mezcla.
  5. Luego agregar la mitad del queso, el salami genoa y parte de las nueces, mezclar nuevamente y servir.
