Ensalada de auyama horneada con semillas tostadas y toque de miel del campo

Ingredientes

  • 1 libra de auyama cortada en cubos pequeños
  • Aceite de oliva al gusto
  • ½ taza de miel
  • 3 tazas de hojas de espinacas bebé
  • ½ taza de cilantro fresco picado
  • 1 taza de semillas de auyama tostadas
  • 1 libra de queso feta cortado en cubitos

Preparación

  1. Pelar, lavar y cortar las auyamas.
  2. Escurrir bien y colocar sobre una bandeja engrasada.
  3. Salpimentar, esparcir por encima aceite de oliva y miel, y llevar al horno hasta que estén cocidas, pero firmes.
  4. Retirar y dejar refrescar.
  5. Colocar la auyama en un bol o ensaladera y agregar las hojas de espinaca previamente lavadas.
  6. Esparcir un poco de aceite de oliva, cilantrico picado, el queso feta y las semillas tostadas.
  7. Mezclar bien, rectificar sabores y servir.
