Ingredientes

  • 1 Taza de cous cous
  • 1 Taza de agua caliente
  • ¼ Cucharadita de sal
  • 1 Cebolla blanca picadita
  • ½ Taza de pasas (rubias y/o morenas)
  • ½ Taza de cranberries secos
  • ½ Taza de uvas sin semillas
  • ½ Zanahoria rallada fina
  • ½ Taza de repollo morado o radicchio morado (opcional) picado finamente
  • 1/3 Taza de puerro picadito
  • 1 Taza de nueces troceadas y tostadas
  • Pimienta al gusto
  • Para el aderezo:
  • ¼ Taza de aceite de oliva
  • ¼ Taza de vinagre de manzana
  • 1 Cucharada de miel
  • 1 Cucharada de vinagre balsámico

Preparación

  1. Colocar el cous cous en un recipiente grande, adicionar el agua caliente y la sal y dejarlo absorber el agua durante 7 minutos (o según indicaciones ), para que crezca.
  2. Agregar la cebolla cortadita (se puede cocinar o amortiguar) y mezclar con el cous cous. Reservar.
  3. Para el aderezo, mezclar los vinagres con la miel y por último el aceite.
  4. Aparte, en un recipiente mezclar pasas, cranberries, uvas, zanahoria y repollo, y bañar con el aderezo.
  5. Mezclar con el cous cous y agregar el puerro, nueces y un toque de pimienta. Mezclar bien y servir.
  6. Se puede servir a temperatura ambiente o llevar a la nevera a refrescar.
