Ingredientes

  • ½ taza de pacanas (puede usar nueces, macadamias, almendras)
  • 4 manzanas verdes (o también fuji)
  • 1 limón
  • 4 tallos de apio
  • ½ taza de uvas rojas sin semillas
  • 1 taza de yogurt natural sin azúcar
  • 4 tazas de rúcula
  • Pimienta al gusto

Preparación

  1. Tostamos un poco las pacanas en una sartén. Retiramos, y cuando estén frías las picamos en trozos. Reservamos.
  2. Pelamos las manzanas y las cortamos en trozos. Las colocamos en un recipiente y las bañamos con el zumo de limón. Reservamos.
  3. Agregamos a las manzanas el apio, las uvas y la mitad de las pacanas, y mezclamos bien.
  4. Aparte, sazonamos el yogurt con la pimienta y lo agregamos a las manzanas.
  5. Dividimos la rúcula en 4 fuentecitas de ensalada y agregamos un toque de sal, pimienta, limón y aceite de oliva, y luego colocamos sobre estas la mezcla de las manzanas.
  6. Para finalizar, agregamos el resto de las pacanas por arriba de cada porción.
