Ensalada de Orzo con Camarones y Queso Feta

Ingredientes

  • 2 Tazas de orzo (pasta parecida al arroz)
  • 1 Libra de camarones, pelados y desvenados
  • 1/3 Taza de aceite de oliva
  • ¼ Taza de zumo de limón
  • 1 Diente de ajo picadito
  • Ralladura de cáscara de 2 limones
  • 1/3 Taza de puerro ancho picadito (solo la parte blanca)
  • ¼ Taza de hojas de menta picaditas
  • ¼ Taza de eneldo picadito
  • 1 Pepino picadito en cubos (sin piel ni semillas)
  • ¾ Taza de queso feta desmenuzado (puede ser sazonado)
  • ½ Taza de aceitunas tipo Kalamata picaditas
  • Pimienta recién molida al gusto

Preparación

  1. Cocinamos la pasta al dente con un poco de sal en el agua. Retirar del agua caliente y pasar por agua fría para detener el proceso de cocción. Colar bien y reservar.
  2. En una sartén colocar los camarones sazonados con 1 cucharada de aceite de oliva, ajo, sal y pimienta. Cocinamos y dejamos dorar por unos 5 minutos, hasta que estén rojos y firmes. Retirar y reservar.
  3. Agregar al orzo ya cocido la menta, eneldo, puerro, ralladura de limón, pepino, aceitunas y los camarones.
  4. Luego mezclar con el aceite de oliva y el zumo de limón, y dar un toque de pimienta.
  5. Por último, agregar el queso feta y volver a mezclar suavemente.
  6. Servir de inmediato o refrigerar por un rato.

  8. TIP: También se puede llevar a refrigerar con todo mezclado menos el queso feta, y agregar este justo al momento de servir.
