Ingredientes

  • 3 papas medianas
  • 3 huevos
  • 2 atados de puerro
  • 4 cucharadas de mayonesa
  • 2 ramitas de romero
  • 15 gramos de queso parmesano rallado
  • Sal y pimienta al gusto

Preparación

  1. Colocar las papas y los huevos en una olla con agua, llevar a ebullición y cocer a fuego medio-lento por 12 minutos.
  2. Retirar los huevos de la olla y ponerlos a enfriar para detener la cocción, y dejar que las papas continúen cociéndose 10 minutos más, hasta que estén tiernas.
  3. Sacar las papas del agua y dejar enfriar a temperatura ambiente.
  4. Limpiar y cortar los puerros, y sofreírlos en aceite hasta que estén tiernos, cuidando que no se quemen. Reservar.
  5. Una vez frías las papas y los huevos, pelar y cortar en trozos grandes.
  6. Combinar ambos en una fuente con el puerro y la mayonesa. Salpimentar y añadir un poquito de romero picado.
  7. Finalmente, agregar el queso y mezclar.
  8. Refrigerar cubierto con un papel film por dos o tres horas.
  9. Decorar con una ramita de romero y servir.
