Ingredientes

  • 15 Unidades de papines (1 libra de papas cortadas en cubos)
  • 2 Cucharadas de aceite de oliva
  • 1 Taza de espinacas
  • 2 Cucharadas de crema de leche
  • 1 Cucharada de ketchup
  • Sal y pimienta al gusto
  • 1 Lata pequeña de pimientos del piquillo cortados en tiritas
  • 1 Bola pequeña de queso de hoja cortado en cubos
  • 1 Lata de atún en aceite
  • 10 Unidades de huevitos de codorniz (hervidos y pelados)

Preparación

  1. Lavar y hervir los papines en abundante agua con sal.
  2. Dejar refrescar.
  3. Lavar, secar y cortar en julianas gruesas las espinacas.
  4. En una sartén con aceite de oliva, pasar las espinacas por dos minutos.
  5. Colocar las espinacas en un tazón, adicionar los papines, el queso, los huevos partidos por la mitad y los pimientos en tiritas.
  6. Aparte, mezclar la crema de leche y el ketchup, salpimentar y unir.
  7. Luego, escurrir el atún y agregarlo a la mezcla del ketchup.
  8. Una vez mezclado, agregar al tazón con las espinacas, mezclar y servir.
