Ensalada de piña y cous cous

Ingredientes

  • ¼ taza de vinagre de sidra
  • 3 cucharadas de azúcar morena
  • 3 cucharadas de cilantro picadito
  • 2 cucharadas de perejil liso picadito
  • 2 cucharadas de aceite de canola o coco
  • 1 cucharada de aceite de oliva
  • Pizca de hojuelas de pimienta de cayena
  • 1 pimiento morrón rojo
  • 1½ tazas de cous cous cocido
  • 1 cebolla roja picadita en cubitos
  • ½ piña fresca
  • 2 tazas de rúcula
  • Almendras laminadas y tostadas
  • Sal y pimienta al gusto

Preparación

  1. Para el aderezo, diluimos el azúcar en el vinagre, agregamos las hojuelas de cayena y luego incorporamos los aceites. Reservar.
  2. En un recipiente colocamos el cous cous (cocido previamente según instrucciones del empaque) y agregamos la cebolla amortiguada*, el cilantro, el perejil picadito, la piña cortada en cubos medianos, el pimiento morrón rojo y la rúcula, y agregamos sal y pimienta al gusto.
  3. Agregamos el aderezo y movemos bien.
  4. Por último, agregamos las almendras tostadas.
  5. Refrigerar para servir fría.
  6. *Para amortiguar, colocar la cebolla en agua por unos minutos para bajar el sabor fuerte de la cebolla cruda.
