Filetitos de Cerdo a la Mostaza

Ingredientes

  • 3 Filetes de cerdo
  • ¼ De taza de mostaza regular
  • 4 Cucharadas de mantequilla
  • 3 Dientes de ajo machacados
  • Sal y pimienta al gusto
  • ¼ De taza de aceite de oliva
  • 2 Cebollas blancas cortadas en medias lunas
  • 4 Tomates maduros tipo bugalú cortados en cuartos
  • 1 ½ Taza de agua
  • ½ Taza vino blanco
  • Crema de leche (opcional)

Preparación

  1. Limpiar los filetes de cerdo y salpimentarlos al gusto por todos lados. Luego bañarlos con ajo y mostaza.
  2. En una olla de fondo grueso (tipo caldero), agregar el aceite de oliva con la mantequilla, dorar y sellar los filetes por todos lados.
  3. Retirar los filetes y reservar.
  4. En ese mismo aceite y mantequilla, agregar las cebollas cortadas en medias lunas, junto con los tomates, el agua y el vino. Dejando evaporar el alcohol un poco.
  5. Bajar el fuego e incorporar nuevamente los filetes de cerdo a la olla o caldero.
  6. Tapar y dejar cocer, más o menos por unos 30 minutos.
  7. Comprobar la cocción pinchando un poco los filetes y viendo que no destile sangre.
  8. También se puede hacer al horno, se hace el proceso igual, se coloca la cebolla, el tomate, el agua, el vino y los filetes en un refractario y se lleva al horno a una temperatura de 325 grados F, por unos 45 minutos, bañando de vez en cuando con el mismo líquido para evitar resequedad.
  9. Al momento en que estén listos, colar el jugo que queda como remanente. Rebanar los filetes y agregar el líquido por arriba.
