Fusilli con pesto de espinaca y nueces mixtas

Ingredientes

  • 1 paquete de pasta tipo fusilli (u otra pasta corta)
  • ¾ taza de nueces mixtas
  • 1 diente de ajo
  • 3 o 4 tazas de hojas de espinaca fresca (8 oz)
  • 1 limón (ralladura y zumo)
  • 1/3 taza de aceite de oliva
  • 1 taza de tomates tipo cherry
  • Sal y pimienta al gusto

Preparación

  1. Cocinamos la pasta según las instrucciones del empaque.
  2. Aparte, preparamos el pesto de espinaca: llevamos las nueces mixtas y el diente de ajo al procesador; luego agregamos las hojas de espinaca y procesamos nuevamente.
  3. Agregamos el zumo del limón y un poco de la ralladura, y con el procesador en marcha, vamos incorporando el aceite de oliva en forma de hilo y continuamos procesando.
  4. Por último, agregamos sal y pimienta al gusto (puede ser 3/4 cucharadita de sal).
  5. Agregamos el pesto a la pasta y luego los tomates cherry cortados por mitad; rectifique de sal y pimienta si lo desea.
  6. Al momento de servir, agregamos un toque de nueces mixtas por encima y un poco de aceite de oliva.
  7. NOTA: Esta pasta es bien refrescante, y la podemos consumir a temperatura ambiente o fría.
  8. Se le pueden agregar también pedacitos de queso feta y hacerla tipo ensalada, o con queso parmesano rallado.
  9. Pudiéramos también hacer una variante con rúcula en vez de espinaca.
