Ingredientes

  • 4 libras de pollo cortado en piezas pequeñas
  • 4 tazas de arroz
  • 1 lata de leche de coco
  • 1 taza salsa de tomate
  • 1 sobrecito de adobo con azafrán
  • 1 ají cubanela
  • 2 ajíes gustosos
  • 3 dientes de ajo triturado
  • 1/2 taza de aceitunas
  • 2 tallos de apio cortados en trocitos
  • 1 taza de petit pois
  • 1 atado de cilantro
  • 1 atado de verduritas
  • 1 cucharadita de azúcar
  • Sal al gusto

Preparación

  1. Sazonamos el pollo con el ajo, ajíes, aceitunas, cilantro, verduras sal y pimienta.
  2. En un caldero calentamos un poco de aceite, agregamos el azúcar y dejamos que la misma tome un color caramelo oscuro.
  3. Agregamos las piezas de pollo y movemos hasta que la carne adquiera un color marrón.
  4. Cocinamos la carne por unos 10 minutos y vamos agregando agua poco a poco para evitar que se queme.
  5. Agregamos la salsa de tomate y los vegetales con que sazonamos la carne.
  6. Agregamos la leche de coco y el azafrán, sal, pimienta y 4 tazas de agua.
  7. Cuando empiece a hervir, agregamos el arroz, movemos bien para que todos los ingredientes se mezclen y cocinamos por unos 20 minutos.
  8. Cuando el arroz esté listo agregamos los petit pois y servimos.
