Lomo de cerdo en salsa de cacao

Ingredientes

  • 2½ libras de carne de cerdo en cubos
  • 4 cucharadas de aceite de oliva
  • 2 cebollas grandes picaditas
  • 1 diente de ajo picadito
  • 1 pimiento rojo picadito
  • 2 zanahorias picaditas
  • 2 hojas de laurel
  • 1 taza de oporto
  • 1¼ tazas de chocolate amargo derretido
  • 1 taza de granilla de cacao
  • Sal y pimienta al gusto

Preparación

  1. Limpiar la carne, cortar en cubos y reservar.
  2. Poner a calentar el aceite en una sartén y sofreír la cebolla; a los dos minutos adicionar el ajo, mover y sofreír.
  3. Adicionar la zanahoria, mover y dejar cocinar por dos minutos; seguir con el pimiento y mover.
  4. Al minuto, retirar los vegetales de la sartén escurriéndolos bien y colocarlos en un envase. Reservar.
  5. En la misma sartén, poner a cocinar la carne, salpimentar y, cuando esté dorada, incorporar las hojas de laurel y los vegetales, y mover.
  6. Adicionar el oporto, mover y dejar reducir.
  7. Por último, agregar el chocolate previamente disuelto junto con la granilla, mover hasta que todo se integre y dejar cocinar por espacio de dos a tres minutos más.
