Pancakes de almendra y yogurt

Ingredientes

  • 2 tazas de harina de almendra
  • ½ cucharadita de polvo de hornear
  • 1 pizca de sal
  • 1 taza de yogurt natural sin azúcar
  • ½ taza de miel
  • 1 cucharada de mantequilla derretida
  • ½ taza de leche
  • 1 cucharada de extracto de vainilla
  • 2 huevos
  • 2 tazas de frutas frescas cortadas a su gusto

Preparación

  1. En un tazón grande, mezclar todos los ingredientes secos.
  2. En un recipiente aparte, batir los huevos enérgicamente.
  3. En un tercer bol, mezclar todos los ingredientes líquidos, y una vez obtenida una preparación homogénea, agregar los huevos y batir nuevamente.
  4. Verter esta mezcla, poco a poco, en el recipiente con los ingredientes secos hasta obtener una consistencia espesa.
  5. En una sartén con un poco de aceite caliente verter un poco de la mezcla (según el tamaño que desee), dejando que se extienda y forme un círculo.
  6. Cocinar a fuego bajo cada panqueca durante uno o dos minutos, hasta que en la parte superior se formen burbujas, luego voltear y dejar cocinar por un minuto más hasta dorar.
  7. Servir las panquecas calientes y acompañadas por las frutas cortadas.
