Ingredientes

  • 4 Tomates de ensalada grandes, maduros y firmes
  • 1 Taza de harina de trigo
  • 1 Taza de harina de maíz
  • 1 Cucharadita de sal de especias
  • 3 Cucharadas de azúcar pulverizada
  • 1 Cucharada de polvo de hornear
  • 1 Manojo de puerro picado
  • 1 Taza de crema de leche
  • 3 Claras de huevo batidas
  • ¼ Taza de fondo de vegetales
  • 2 Tomates grandes maduros, pelados y hechos puré (pueden ser de lata)
  • ½ Libra de queso mozzarella rallado
  • Sal y pimienta al gusto
  • Aceite de oliva

Preparación

  1. Mezclar en un recipiente las harinas, sal de especias, azúcar, polvo de hornear y puerro.
  2. En otro envase, integrar la crema de leche y las claras de huevo; mezclar bien e incorporar a la otra mezcla reservada, con movimientos envolventes.
  3. Añadir el fondo de vegetales y el puré de los tomates bien maduros, salpimentar, mover y rectificar sabores.
  4. Reservar.
  5. En un molde refractario untado de aceite de oliva, colocar ruedas de tomates en el fondo, esparcir un poquito de aceite de oliva y puerro picado por encima, y salpimentar un poquito; luego verter la mezcla reservada, colocar otra capa de ruedas de tomates, esparcir un poco de puerro picadito, salpimentar un poco y, por último, cubrir bien de queso mozzarella rallado.
  6. Llevar al horno precalentado a 350ºF por unos 40 a 45 minutos, aproximadamente.
