Ingredientes

  • 6 Berenjenas cortadas a lo largo (lonjas finas)
  • 3 Plátanos bien maduros pero firmes (asados en el horno)
  • 5 Cebollas blancas cortadas en juliana
  • 1 Ramito de orégano fresco
  • 1 Taza de fondo de vegetales
  • 2 Bolas pequeñas de queso Mozzarella
  • 1 Taza de cream cheese
  • Mantequilla
  • Aceite
  • Salsa Bechamel
  • 1 Yema de huevo
  • 1 Taza leche caliente
  • Nuez moscada al gusto
  • Sal y pimienta al gusto
  • 2 Cucharadas de fécula maíz

Preparación

  1. Asar las lonjas de berenjena y los plátanos maduros en una parrilla o poner en una bandeja engrasada.
  2. En una sartén con un poco de aceite y mantequilla, dorar las cebollas y reservar.
  3. Hacer la bechamel uniendo leche caliente, nuez moscada y fécula de maíz.
  4. Mezclar bien y llevar al fuego; salpimentar, agregar la yema de huevo y mover vigorosamente sin parar, hasta que la mezcla tome consistencia.
  5. Unir bien las cebollas doradas con el cream cheese y el fondo de vegetales; agregar los plátanos maduros hechos puré y mezclar bien.
  6. En un molde refractario enmantequillado, colocar lonjas de berenjenas, seguir con una capa de la mezcla de plátanos maduros y luego una capa de la bechamel.
  7. Repetir lo mismo hasta terminar con una capa de berenjenas, esparcir un poquito de la bechamel y el queso mozzarella desmenuzado por encima.
  8. Llevar al horno precalentado a 350ºF por unos 35 a 40 minutos.
  9. *Se deben utilizar los plátanos que necesitan cocción. No confundir con bananos o guineos.
