Ingredientes

  • 1 Masa base para quiche
  • 1-2 Paquetes de tocineta
  • 3 Huevos
  • 2 Yemas
  • 1 Taza de crema de leche
  • ¼ De taza de leche
  • 1 Taza de queso Gruyere rallado
  • Pimienta (al gusto)
  • Nuez moscada (opcional)
  • 1 ¼ De taza de harina
  • ¼ De cucharadita de sal
  • 7 Cucharadas de mantequilla fría
  • 4-6 Cucharadas de agua fría

Preparación

  1. Para la masa
  2. En un recipiente colocar la harina, la sal y agregar la mantequilla cortada en cubos. Con un tenedor (o preferiblemente en un procesador) mezclar la harina con la mantequilla hasta que se vuelva como una arena. Luego ir agregando agua poco a poco, se inicia solo con 2 cucharadas y luego de una en una, hasta obtener una masa manejable, que no se pegue en los dedos.
  3. Pre-engrazar un molde y estirar la masa. Si se desea se puede dejar reposar en nevera unos 15 minutos antes o después de estirarla en el molde. Llevar al horno precalentado a una temperatura de 375 grados por unos 15 minutos. Puede pinchar la masa o colocar habichuelas secas por arriba para hacer peso. Retirar del horno y reservar.
  4. Aparte en una sartén colocar la tocineta y dejar dorar, retirar la grasa y reservar.
  5. Mientras y aparte, batir los huevos junto con la crema, leche y la pimienta (igualmente la nuez moscada si se usa), agregar el queso rallado.
  6. Colocar la tocineta sobre la masa y cubrir con la mezcla de crema de queso. Hornear por 30 minutos o hasta que el relleno esté cuajado y esté dorado.
  7. Retirar del horno y dejar enfriar un poco antes de cortar.
