Risotto de hongos porcini y café

Ingredientes

  • 4 tazas de caldo de verduras
  • 1 taza de café espresso
  • 4 cucharadas de mantequilla
  • 1 cebolla picada
  • 2 tazas de arroz arborio
  • 1 taza de vino blanco
  • 30 gramos de hongos porcini secos
  • Pimienta al gusto
  • 2/3 taza de queso parmesano

Preparación

  1. Poner a remojar los hongos en 1 taza de agua caliente por 15 minutos. Reservar
  2. Poner a hervir el caldo de verduras en una cacerola.
  3. Aparte, colocar la cebolla con mantequilla en una cacerola grande o sartén profunda y cocer por 3 minutos.
  4. Agregar el arroz y mover.
  5. Luego agregar el vino y mover hasta que se evapore el alcohol, unos 3 minutos más.
  6. Agregar ½ taza del caldo que está hirviendo y revolver. Repetir el proceso cada 10 minutos. Retirar los hongos reservando el líquido, picarlos y agregar al arroz junto con su líquido colado (para que no se pasen los residuos).
  7. Agregar la taza de café, sal y pimienta.
  8. Continuar agregando caldo y moviendo cada 10 minutos, hasta que el arroz esté al "dente" (justo antes de que esté suave).
  9. Cuando el arroz ya esté cocido, le ponemos por último el queso parmesano.
  10. Servir inmediatamente.
