Salsa de vino tinto con pimienta verde

Ingredientes

  • 1 Cucharada de pimienta
  • 4 Cucharadas de mantequilla
  • ¼ Taza de Brandy o Coñac
  • ½ Taza de cebolla o cebollín picado a la juliana
  • 1 Taza de vino tinto
  • 1 Taza de consomé de pollo
  • 3 Cucharadas de pimienta verde
  • Opcional: 1 Cucharadita de fécula de maíz

Preparación

  1. En una sartén colocar 2 cucharadas de mantequilla y dejar derretir.
  2. A fuego bajo cocinar los cebollines hasta que estén transparentes.
  3. Agregar la pimienta.
  4. Flambear con el Brandy o Coñac.
  5. Incorporar el vino tinto, subir el fuego y reducir a la mitad.
  6. Agregar el consomé de pollo y volver a reducir.
  7. Retirar del fuego y colar. Reservar.
  8. En la misma sartén incorporar la pimienta verde.
  9. Saltear por unos segundos para que tome calor y ceda su sabor.
  10. Luego, incorporar la salsa que está reservada y hervir a fuego bajo.
  11. Para finalizar, agregar 2 cucharadas de mantequilla fría y disolver con la ayuda de un batidor de mano.
  12. Si es necesario, y se desea espesar un poco, tomar un poco de la salsa y diluir en ella una cucharadita de fécula de maíz.
  13. Luego agregar a la salsa para espesar.
