Salteado de pollo con mango

Ingredientes

  • 2 libras pechugas de pollo deshuesadas (o muslos deshuesados)
  • 1 cucharadita de jengibre fresco rallado
  • 1 diente de ajo aplastado
  • 1 chili pequeño o 1 cucharadita de hojuelas de pimienta de cayena
  • 1 pimiento morrón rojo
  • 1½ tazas de vainitas (tipo chinas)
  • 1 paquete de baby corn
  • 1 mango grande maduro (firme)
  • 3 cucharadas de puerro picado
  • 2 cucharadas de aceite de canola
  • 1 cucharada de salsa de soya
  • 3 cucharadas de vinagre de arroz
  • 1 cucharadita de aceite de sésamo
  • Sal y pimienta al gusto

Preparación

  1. Cortamos el pollo en tiras finas o cubos y lo colocamos en un recipiente.
  2. Aparte, mezclamos el jengibre, el ajo y el chili o pimienta de cayena y sazonamos bien el pollo con la mezcla.
  3. Cortamos el pimiento morrón en cubos medianos con cortes diagonales al igual que las vainitas, y cortamos los maicitos baby por la mitad.
  4. Pelar el mango y cortarlo en cubos.
  5. Calentamos el wok con el aceite y cocinamos el pollo de 4-5 minutos, hasta que esté dorado.
  6. Agregar el pimiento, dejar cocer por unos 4 minutos y luego agregar las vainitas y los maicitos baby previamente blanqueados.
  7. Por último, agregamos el puerro y cocinamos por 1 minuto más.
  8. Aparte, mezclamos la salsa de soya, el vinagre de arroz y el aceite de sésamo e incorporamos la mezcla al wok.
  9. Luego agregamos el mango y salteamos por 1 minuto.
  10. Opcional, podemos agregar un toque de sal y pimienta. Servir de inmediato.
