Ingredientes

  • 4 Latas de habichuelas (pueden ser rojas y/o rosadas)
  • 1 Cebolla blanca
  • 1 Pimiento rojo
  • ½ Ají cubanela
  • 1 Lata de tomates
  • 4 Tazas de caldo de pollo
  • 1 Hoja de cilantro ancho
  • Sal y pimienta
  • Aceite
  • Crema de leche
  • Plátano maduro
  • Puerro

Preparación

  1. Hacer un sofrito con la cebolla y el morrón rojo, en un poco de aceite con un poco de sal y pimienta, a fuego medio.
  2. Dejar cocinar por unos 3 minutos, agregar luego los tomates en lata (aplastados sin usar el jugo de la lata), el ají cubanela y el cilantro, dejar cocinar por unos 3 minutos más.
  3. Drenar las habichuelas e incorporarlas al sofrito. Cocinar por unos 2 minutos, agregar el caldo y subir el fuego.
  4. Llevar a hervir (más o menos unos 5 minutos). Apagar y dejar reposar por unos 5 a 10 minutos. Retirar el cilantro y el ají cubanela. Licuar y colar.
  5. Llevar nuevamente a la olla y agregar unas 2 a 3 cucharadas de crema. Mover y llevar a calentar.
  6. Servir caliente y sobre la sopa un poco de puerro picadito, plátanos maduros y el chicharon.
  7. Para los plátanos maduros, cortar a la mitad (longitudinalmente y otra vez a mitad) retirar las semillas y cortar en cubos.
  8. Freír en aceite bien caliente, (solo que cubra la superficie de la sartén), dejar freír bien, retirar y colocar sobre papel de toalla absorbente.
