Ingredientes

  • 1 rabo de res
  • 1 cebolla picadita
  • 3 tallos de apio con todo y hojas
  • 3 dientes de ajo triturados
  • 2 zanahorias peladas y cortadas en cubos
  • 2 libras de yuca pelada y cortada en cubos
  • 2 ajíes cubanela cortados en tiras
  • 1 libra de cepa de apio
  • 3 ajíes gustosos
  • 1 libra de auyama
  • 1 atado de cilantro
  • 2 hojas de laurel
  • 1 atado de verduritas
  • Sal y pimienta

Preparación

  1. En una olla con aceite sofreímos ajo, cebolla, ajíes gustosos y ajíes cubanela.
  2. Luego agregamos el rabo sazonado con sal y pimienta y sofreímos por unos minutos hasta dorar.
  3. Añadimos agua hasta cubrir bien la carne y añadimos las hojas de laurel.
  4. Dejamos que hierva tapado a fuego medio.
  5. Cuando empiece a hervir agregamos la auyama, la cepa de apio entera, la yuca y las zanahorias.
  6. Vamos agregando agua conforme la vaya necesitando.
  7. Cuando la carne esté blanda añadimos las verduras atadas juntas y rectificamos de sal y pimienta.
