Soufflé Frío de Limón con Frutas Maceradas

Ingredientes

  • 2 Tazas de azúcar
  • 1 1/2 Taza jugo del limón fresco
  • 12 Yemas
  • 4 Huevos enteros
  • 3 Cucharadas de ralladura de limón
  • 1 Cucharadita de vainilla
  • 4 Tazas de crema para montar, fría
  • Fresas picadas, blueberries y/o frambuesas
  • 2 Cucharadas de azúcar
  • 1 Cucharada de limoncello opcional

Preparación

  1. Combinar las yemas, los huevos enteros, el jugo de limón, el azúcar, la ralladura de limón y la vainilla en un bowl. Colocar sobre baño maría caliente sin que el agua toque el bowl.
  2. Con un whisk o batidor, batir de manera constante hasta que la mezcla espese y llegue a 160 F en un termómetro. Cuando esté lista, mover la mezcla de limón a un bowl, colocar un papel film por encima y dejar enfriar. Llevar a la nevera para que enfríe.
  3. Mientras, colocar las frutas en un bowl con azúcar y licor para macerar, remover y dejar reposar.
  4. Cuando la mezcla de limón esté fría, colocar en el bowl de la batidora la crema para montar fría y batir a alta velocidad hasta lograr picos firmes.
  5. Con movimientos envolventes, incorporar la crema a la mezcla de limón.
  6. En un pirex o en copas o ramekins individuales, colocar las frutas en la base y completar con el soufflé de limón.
  7. Dejar enfriar y disfrutar.
