Tagliatelle con salsa de almejas

Ingredientes

  • 1/2 paquete de tagliatelle
  • 2 libras de almejas bien limpias
  • 2 dientes de ajo picaditos
  • 2 cebollas bien picaditas
  • 1 hoja de laurel
  • 2 cucharadas harina de trigo
  • 2 cucharadas perejil picadito
  • 1 cucharada salsa de tomate
  • 2 cucharadas pimentón
  • 1 taza de vino
  • Sal y pimienta al gusto

Preparación

  1. En una olla con un poco de agua hirviendo y la hoja de laurel añadimos las almejas y las cocinamos al vapor.
  2. Cuando estén abiertas, dejamos enfriar y retiramos las conchas.
  3. Colamos el agua en que se cocieron y reservamos.
  4. Sofreímos en una sartén con el aceite de oliva las cebollas y los dientes de ajo.
  5. Cuando la cebolla empiece a transparentar agregamos el pimentón, removemos bien y agregamos la harina.
  6. Mezclamos bien y añadimos el vino.
  7. Esperamos que evapore el alcohol y agregamos el agua de la cocción de las almejas y luego las almejas.
  8. Dejamos que espese un poco y añadimos el perejil picadito.
  9. Cocinamos la pasta de acuerdo a las indicaciones del empaque y cuando esté lista la bañamos con la salsa.
