Ingredientes

  • 2 tazas de quínoa cocida
  • 1 taza de camarones escalfados
  • 1 tomate
  • 1 taza de puerro o cebolleta
  • ½ pimiento verde
  • ½ pimiento rojo
  • 1 pepino
  • 3 limones
  • 1 atado de perejil fresco picado
  • Unas hojas de menta fresca picadas
  • Aceite de oliva virgen extra
  • Sal y pimienta

Preparación

  1. Pelamos el pepino y lo picamos en cuadritos, y también picamos en cuadritos los pimientos, la cebolleta y el tomate.
  2. Lo colocamos todo en un bowl, agregamos el zumo de los limones, un buen chorro de aceite de oliva virgen extra, sal, pimienta y la quinoa, y mezclamos bien.
  3. Picamos el perejil y la menta, los añadimos al bowl y removemos.
  4. Por último, agregamos los camarones y mezclamos todo muy bien.
