Tomates rellenos de queso azul

Ingredientes

  • 4 tomates de ensalada medianos (o puede usar los tipo bugalú)
  • ½ taza de cream cheese
  • ½ taza de zanahorias ralladas finamente
  • 1/3 taza queso azul desmenuzado
  • 1/3 taza puerro picado
  • 1/3 taza pan molido
  • ¼ taza sour cream
  • ¼ taza de nueces picadas

Preparación

  1. Precalentamos el horno a 400ºF/180ºC.
  2. Le cortamos la tapa de arriba a los tomates, removemos el centro y las semillas, y ahuecamos el tomate. Reservamos.
  3. Para el relleno, combinamos el cream cheese, las zanahorias ralladas, el queso azul, puerro, ¼ de taza de pan molido y sour cream. Salpimentamos al gusto.
  4. Rellenamos los tomates con esta mezcla y esparcimos por arriba las nueces y el resto del pan rallado.
  5. Llevamos al horno por 5-7 minutos. Retiramos del horno y servimos.
  6. Nota: Se puede sustituir el queso azul por un queso neutral, como mozzarella o provolone. También se puede cambiar el cream cheese por queso de cabra.
