Ingredientes

  • 12 Cup cakes de vainilla o 1 bizcocho
  • 2 Tazas de crema de coco
  • 2 Tazas de leche de coco
  • 2 Tazas de leche evaporada
  • ¼ De taza de ralladura seca de coco
  • 2 Claras de huevo
  • 1 Taza de azúcar blanca
  • ½ Taza de agua
  • Pizca de sal

Preparación

  1. Desmenuzar los cupcakes o el bizcocho y colocarlo en un recipiente.
  2. Aparte, licuar la leche de coco, la crema de coco y la leche evaporada. Agregar 2 cucharadas de la ralladura de coco y volver a licuar.
  3. Este líquido debe irse agregando al bizcocho, poco a poco hasta ir viendo la consistencia queremos tener.
  4. Lo recomendable es no agregarlo todo y dejar un poco aparte para que cada quien, de querer más, pueda agregarlo a su gusto.
  5. Luego servir en vasitos individuales o en un molde.
  6. Agregar por arriba el suspiro y luego un poco de coco rallado tostado.
  7. NOTA: en una sartén, tostar el resto del coco rallado hasta que tome un tono dorado.
  8. Para el suspiro: colocar en una ollita a fuego medio-alto el agua y el azúcar. Una vez empiece a hervir, montar las claras a punto de nieve con una piza de sal en la batidora a velocidad media-alta. Cuando llegue a este punto, reducir la velocidad de la batidora hasta que el almíbar esté listo.
  9. Cuando el almíbar alcance el punto de ‘bolita blanda”, volver a subir la velocidad de la batidora a media-alta y verter en forma de hilo por un ladito del bowl de la batidora.
  10. Mezclar a velocidad alta por alrededor de 4-6 minutos hasta que el suspiro esté bien brilloso, el bowl de la batidora baje un poco la temperatura y el suspiro tenga picos firmes. Agregar un chorrito de vainilla o cualquier otro extracto si se desea que tenga sabor ligero.
